Overview of class:

When you say American Cheese – do you immediately think of the orange stuff that’s sliced and individually wrapped in plastic or packaged into a rectangular shelf-stable box? Many people around the world do. It’s time to take a look and have a taste of some of the top cheeses made in America.

Learn about the history of cheese in America and how we’ve come full circle to produce some of the top artisan cheeses in the world.

What you will take away from this class:

• An abbreviated history of cheese-making in America
• Taste 8-10 top American cheeses, some 2009 award-winners
• Basic cheese board ‘how-to’ as an easy up-sell for dinner parties
• How to host a cheese tasting party as an additional revenue stream

Monica Thomas

Owner of Tailored Taste Personal Chef Service, Certified Personal Chef Monica Thomas has been putting delicious, homemade meals on the tables of busy folks in the D.C. area for over five years. Monica serves as president of the Capital Chefs Chapter of USPCA (2009 Chapter of the Year) and as a Local Exchange Coordinator for Women Chefs and Restaurateurs (WCR).

Monica has published numerous articles in Personal Chef Magazine and produces a quarterly newsletter. She also teaches public cooking classes at Williams-Sonoma, private classes in clients' homes, and is a chef instructor at the Art Institute of Washington, teaching culinary students the fine art of becoming a personal chef and the practicalities of catering management. Prior to opening her personal chef business, Monica worked with one of the largest and most prestigious caterers in St. Louis, MO, Patty Long Catering. She spent many years in the event planning business working with hotels, caterers, florists, and other service industry providers.

Monica volunteers as a chef instructor for Operation Frontline and has actively supported Share Our Strength by volunteering with Taste of the Nation and conducting various educational culinary demonstrations at events in D.C. for OFL. Monica also volunteers at the annual Ovarian Cancer National Alliance fundraiser, Turn Up the Heat with Women Chefs.

In her spare time, Monica takes classes at her favorite local cheese shop and samples as many cheeses as possible – just for professional knowledge, of course.
