Overview of class:

Candida is a disease that affects the autoimmune system and digestive track caused by eating refined foods, sugars, yeast, steroids, birth control pills, stress and antibiotic use. We all have yeast in the intestinal tract, but when there is an imbalance in bacteria, toxins are absorbed into the bloodstream and body tissues cause an allergic reaction to them.

Understanding what the disease is, how to positively impact the patient’s health through food consumption, and working in tandem with the patient’s physician can be a most rewarding experience. Learning proper ingredient substitutions for this and other special needs diets can help you expand personal chef business and reach a much underserved market.

Chef Deb Cantrell is the owner of The Savor Personal Chef Service, Executive Director of the non-profit organization Cuisine for Healing and former owner of Brownie Points Personal Chef Service and Cantrell’s Lakeview Grill.

As a certified personal chef, caterer and former restaurateur and physical therapist, Deb specializes in creating delicious, healthy meals for her clients – meals made with the finest, freshest ingredients and no preservatives or additives. Meeting the growing need for medically-necessary diets, Chef Deb Cantrell specializes in preparing meals for clients with special dietary needs and works with several regional and national nutritional organizations to keep up with the latest research in this area. Her culinary style blends the home-style methods of her grandmother and mother with the gourmet taste of her husband’s European pallet, and she continually experiments with classic preparations and healthy, new dishes.

Named Marketer of the Year in 2007 by the United States Personal Chef Association, Deb also teaches healthy cooking classes, volunteers her time and talents for various charity events (including the annual Cookin’ for Kids Celebrity Chef Cook-Off in Fort Worth) and serves as the executive director of Cuisine for Healing, a non-profit organization dedicated to making healthy, healing food resources readily available to those suffering from cancer or other illnesses.
